St. John Catering2010 VI Ultimate Chef
Chef Mathayom (Mat) Vacharat, the 2010 Ultimate Chef winner, has been professionally working with food since 1993. He has been Executive Chef at several of St. John’s premier restaurants, including Asolare on Caneel Hill, Paradiso at Mongoose Junction, Chateau Bordeaux, and Chloe and Bernard’s at the Westin. He has been a personal chef for 8 years, now working with St. John Catering. Although his culinary forte is Asian Fusion, he is also experienced in Caribbean Flair, Progressive American, and Italian Comfort cuisines. Chef Mat uses only the freshest available products and tends to create custom menu items based on seasonal accessibility, be it seafood, local fruit and produce, or organic greens.

Celebrated Chef Theo is an award-winning, certified Executive Chef and Captain of the regionally competing, award-winning VI Culinary Team since 2006. He serves as the Chef Instructor of the VI Career, Technical, and Adult Education Institute formerly the Raphael O. Wheatley Skill Center. Chef Theo markets a line of island sauces and marinades, seasoning blends and vinaigrettes. He is developing a “Virgin Chef TV series featuring Caribbean flavors and spices. Chef Theo participated in the Taste of St. Croix since 2006, this year a member of the local culinary team that conquered the visiting chef team.
